Campfire lingcod/rockfish & potatoes



INGREDIENTS: 
2 lbs Oregon long line rockfish or ling cod fillets (boneless & skinless) (purchased at Flying Fish of course)
2 lbs red potatoes (cut into a little smaller pieces than other veggies)
1 red bell pepper
1 lb broccoli
1 lb zucchini
1/2 lb kale
1 onion
4 garlic cloves
1/4 cup Avocado oil
1 tbsp Jacobsen Salt
1 tbsp Thrive "Special Sauce" or Aardvarks hot sauce
1/2 bottle Ninkasi Radient ale

PREPARATION:
Take all ingredients and chop into bite size pieces. Mix all ingredients together in big mixing bowl.  
Make 6" x 6" boats with tin foil. Double layer of tin foil.  
Place ingredients in center of boat. Splash approx 1-2 tablespoons of beer on top.
Fold sides into center. Twist closure together like a rope.
Place directly onto hot coals around the outside of campfire. Be careful not to poke holes in tin foil so liquid stays inside. 
Cook for approx 15 minutes and check doneness. Fish should flake apart with a fork and potatoes should be soft. Salt with Jacobsen finishing salt and enjoy meal using the tin foil boat as your dish
