We've had some good times these past few months and we've got good things coming down the line. But for now? Let's cut the crap and get to the good stuff. You're here for the fish, we're here for the fish, let's talk about the fish.


First and foremost, just a heads up: the window on fresh local Albacore Tuna is squeezing southward, closing at a hastening pace, so do not snooze, lest you lose. We've been singing Tre-Fin Day Boat Tuna's praises all summer, and sharing the bounty through our house-made poke, but you gotta act quick to take some home - get enough for some home sushi, a nice grilled tuna steak, some frozen steaks for later grillin', and some loins for cannin'.


ALSO: As pictured above, we've checked in again with our friends at the Quinault Indian Nation on the beautiful Olympic Peninsula. They send their regards with a double shot of sensational salmon, the King and the Coho, which lead off this week's fish freshness.

You can taste it, can't ya. Now just picture throwing all of that into a nice curry base with some yukon golds and maybe even a nice hunk of lingcod to flake apart in the stock. Next week's forecast is wet with highs in the 50s. In other words, next week's forecast is curry seafood stew with yukon golds. Here's a decent start - but we definitely recommend searing up a few of those scallops and tossing them in (with the acknowledgement you'll eat one right out of the pan and go "hot! hot! hot!" while trying not to burn your tongue). It's a five spot of shellfish freshness happening now:

Fifteen. A pretty nice number. An underrated number, perhaps. It's an interstate that'll get you from Mexico to Canada without driving the Five with an overnighter in Vegas. It's the group on the periodic tables known as pnictogens, as you obviously know. And here at the Flying Fish Oyster Bar? Craig Gildersleeve opened Flying Fish Company in Sandpoint, Idaho in 1979 - the year before his son Lyf was born. Lyf, president of Flying Fish Company, has spent his entire life around fish, including an aquaculture education at the Harbor Branch Oceanographic Institute at Florida Atlantic University.


Flying Fish has four locations: Sandpoint, Idaho; Durango, Colorado; Park City, Utah; and Portland, Oregon. The Portland location opened in 2009 as a food cart at the D Street pod on Division Street. In 2011, we opened the fish shack on Hawthorne Boulevard. In 2016, we joined forces with our friends at Providore Fine Foods on Sandy Boulevard, and in 2017, we moved all our operations there. One location, one family, everything you need.
