COVID PROTOCOL STUFF

(Scroll down for this week's fresh list and menu)

Flying Fish is here for you with fresh fish, oysters, meat, groceries, and hot prepared food. We're keeping it safe and we're keeping it 100. Here's how it works:

  • OPTION 1: SHOP IN-STORE: We welcome you to come into our shop. Four customers at a time please, maintain six feet social distancing, and put on a pair of single use gloves when you enter the store. We'll provide them if you do not have them. OHA recommends that you wear a mask inside.
  • OPTION 2: ORDER ONLINE FOR DELIVERY OR PICKUP: Fresh and frozen fish, shellfish, oysters & meat are available in our Mercato shop. We'll deliver or we'll have it ready for you to pick up (in-store or curbside). Order online HERE.
  • OPTION 3: ORDER PREPARED DISHES FROM OUR RESTAURANT: Chefs Andre, Erik and Lyf's staples and favorite dishes are made to order. Peruse the menu and order online for pickup (in-store or curbside) HERE.
  • NEW OPTION FOR NORTH PORTLAND: Flying Fish has added select items to the food delivery service from our pals Ruby Jewel. Order online for delivery here (NoPo only).

Please try to avoid calling in orders - this is difficult and unwieldy to manage with the volume of orders we're receiving. Ordering online and shopping safely in-store is the 2020 way to go. Thank you so much for understanding and for supporting our family-owned business with 15 employees.

FISH TALES ARE HERE

Fish tales, Lyf's got em - and you know he wants to share em. Shoutout to the Right at the Fork podcast for having him back. Tune in hear the cap'n talk about his fish philosophy and how it exists in the covid era - listen HERE.

Heads up: It's been a bit of a slow go out on the water lately, so with regret we must report that our wild salmon list is, as of this writing, empty. The ocean chinook fishery is closed till next week, and both Columbia River chinook and Copper River sockeye have been light. But they'll be back. We'll let you know.

However, as pictured above, we do have Ora King Salmon ready to go. That hunka hunka salmon fillet was soaked for 20 minutes in ice cold water with cane sugar and Jacobsen sea salt whisked in, patted dry, brushed with olive oil, then baked at 275º for 20 minutes. Yeah, it's that easy. Serve over a warm sweet potato salad boiled with diced red onions, drained, and mixed with avocado mayo and orange zest. Salt and pepper to taste. The sauce? Three tablespoons of olive oil, couple diced shallots, the juice of the same orange, a teaspoon of cinnamon, and a little dab of red wine. Slow simmer to reduction. Pour over. Go nuts. It's a party in your mouth and everyone's invited.

Alaska Halibut's steady as she goes too. Those two heavy hitters are up first in this week's virtual baseball lineup.

THIS IS WHY THEY CALL IT SALAD SHRIMP

Shrimp salad? That's a whole heap of awesome, if we may say so. The peppery greens, the light-oily dressing, the salty cheese, the cold chewy lil shrimps. It tastes like summer, and summer's official unofficial opening is Memorial Day weekend, i.e. now, i.e. it's salad shrimp time. Salad shrimp. You can call them bay shrimp; you can call them pink shrimp. You can call them cold chillin chewies. You will not be wrong.

Harvested wild on the muddy bottom of the Pacific, these cold chillin chewies are cooked, peeled, and ready to eat - in a heap of salad. They are small but they are many, and they are up first on the Fresh Shellfish List as of 5/22.

If you're asking a shop with an actual oyster bar anything about oysters, the answer is yes. Please note: we miss the oyster bar and do we look forward to a time when its return is safe and okay? Again: Yes.

ABOUT US

Craig Gildersleeve opened Flying Fish Company in Sandpoint, Idaho in 1979 - the year before his son Lyf was born. Lyf, president of Flying Fish Company, has spent his entire life around fish, including an aquaculture education at the Harbor Branch Oceanographic Institute at Florida Atlantic University.

Flying Fish has three locations: Sandpoint, Idaho; Durango, Colorado; and Portland, Oregon. The Portland location opened in 2009 as a food cart at the D Street pod on Division Street. In 2011, we opened the fish shack on Hawthorne Boulevard. In 2016, we moved into a stand at Providore Fine Foods on Sandy Boulevard. In February 2020, we opened our standalone location on East Burnside.
