It costs only slightly more to take home a fillet such as this for a taste of rainbow trout raised exclusively on a vegetarian diet (no fishmeal) in the upper reaches of the Sierra Nevadas in scenic Susanville, California. Seriously: taste the difference - this is a super healthy fish from a super sustainable company, and it's ideal for your backyard smoker. Smoke em, we've got em.

URGIN' FOR STURGEON? GO WILD


This file photo from our late beloved kitchen kontainer at our late beloved fish shack shows the whole shebang in its prehistoric totality: the wild Columbia River White Sturgeon. Sturgeon is almost as important historically to the Pacific Northwest as salmon, but it's a different beast altogether (literally and figuratively).


Sturgeon fishery management is well tended and wild salmon is rated a Good Alternative, both of which are why we only have it every so often. But we've got it in right now and you can buy it in good conscience - and good taste. As one of the firmer fishes around, it makes a wonderful culinary canvas. PBS' show A Taste of History has a fantastic historical recipe for baked stuff sturgeon HERE, and we've got the Dungeness Crab Meat you'll need for stuffin'. Flying Fish and the Shuck Portland squad - Wetlands Conservancy, and Friends of Netarts Bay WEBS (Wetlands, Estuary, Beach and Sea) - team up to lead this epic day of working AND playing at the Oregon Coast for World Oceans Day, and oh yeah, we'll be eating AND drinking right. We'll leave Providore at 8:30am and head to the coast to explore tidal pools, lead a community beach cleanup in Oceanside, check out the Whiskey Creek Oyster Hatchery and Jacobsen Salt Company. ABOUT US


Craig Gildersleeve opened Flying Fish Company in Sandpoint, Idaho in 1979 - the year before his son Lyf was born. Lyf, president of Flying Fish Company, has spent his entire life around fish, including an aquaculture education at the Harbor Branch Oceanographic Institute at Florida Atlantic University.


Flying Fish has four locations: Sandpoint, Idaho; Durango, Colorado; Park City, Utah; and Portland, Oregon. The Portland location opened in 2009 as a food cart at the D Street pod on Division Street. In 2011, we opened the fish shack on Hawthorne Boulevard. In 2016, we joined forces with our friends at Providore Fine Foods on Sandy Boulevard, and in 2017, we moved all our operations there. One location, one family, everything you need.
