Need some fishes or oysters or meats or a nice afternoon drink? Here's what we've got for this first week of 2017...

I wish they all could be California prawns.

FRESH FROM CALIFORNIA: Spot Prawns (pictured), Squid, and - new product alert! - tenderized Abalone Steaks. Abalone? Oh you know, the sea snail, the gastropod mollusk, the tough muscle that gets detached from its shell, tenderized (pounded like a salisbury steak), and fried in oil for 30 seconds tops on both sides. Taste is somewhere between clam and chicken. Try some.

FRESH FROM OREGON: Petrale Sole, Rockfish, whole cooked Dungeness Crab, and precooked and picked Dungeness Crab Meat to go.

FRESH FROM WASHINGTON: Steelhead, Manila Clams, and Penn Cove Mussels, as always.

FRESH FROM THE PACIFIC OCEAN: Coming south from Alaska, True Cod. Coming north and east from Hawaii, Bigeye Ahi Tuna, Swordfish, and Tombo - Albacore Tuna.

FRESH FROM THE CONTINENTAL UNITED STATES: Sustainable farm-raised Rainbow Trout from Idaho and wild Atlantic Scallops from Massachusetts.

FRESH OUT OF OUR SMOKER: Brined with Bee Local Raw Honey and Sea Salt, sloooooow smooooked over apple and wood chips, our house-smoked fish list reads somethin like...

  • Smoked Steelhead galore
  • Smoked King (Chinook) Salmon, sustainable farm-raised in BC, Canada
  • Smoked Black Cod (Sablefish) from the Oregon Coast, tailor made for a delicious Larry David sandwich. Ted Danson loves it.
  • Smoked Trout for your creamy breakfast scramble
  • Smoked Marlin and Smoked Swordfish from Hawaii that, alone or together, makes a damn good snack right out of the packaging, no forks or fires necessary
  • Smoked Scallops that need no further description

Hot dang diddly dog, Nevør Shellfish Farm's Torkes Oysters are back in action for the first time in a couple months. Welcome back, old friend. They top a list that looks something like...

  • Nevør Torkes Oysters
  • Nevør Netarts Oysters
  • Hama Hama Oysters
  • Blue Pool Oysters

Also at the Oyster Bar, Amber's Clam Chowder is rocking the house. Come dip that ladle. And don't forget the Hot Smoked Platters with crostinis and pickled veggies.

PORK TACO FIXINS: We went and got ourselves half a pig at Elkhorn Farm & Forge, and we butchered it ourselves. We got whatever cut you need, including Pork Butt, Chops, Kidney, Leaf lard, etc for slow cooking, fast cooking, bastin or filling an organic Three Sisters corn tortilla with chopped onions, cilantro, and definitely NOT one of those little cups of hot sauce you snuck out of Los Gorditos from your last visit. Or maybe you're up for some fresh Meat Monger Sausage: sweet italian, spicy italian, breakfast sausage. All good. All fresh. All pork. Any cut you like.

Other fresh cut meats for the weekend and week ahead:

  • Chicken from Scratch Farms
  • Rabbit from Rain Shadow El Rancho
  • Pasture-raised Beef from Painted Hill

As always, follow us on Facebook to stay up to date on freshies, on the Pearl app to see the latest on the Oyster Bar menu, and on Instagram to see all the pretty pics of all the pretty food. Don't forget to tag @flyingfishpdx, we wanna see your meals!

That's all for now. Stick around, we've got some other changes in store.

Cheers -
